SWEET POTATO CASSEROLE WITH TOPPING
Hi Deana, Don and Carole:
3 cups of hot sweet potatoes mashed, one-third cup milk, 1/2 cup butter or margarine, 1 cup white sugar, 2 eggs, 1 tablespoon vanilla. Mix and pour into casserole.
Topping: 1 cup light brown sugar, 1/2 cup plain flour, one-third cup butter or margarine (not melted), 1 cup nuts (chopped). Mix topping with fork and sprinkle crumbs on top of casserole.
Bake uncovered at 350 for about 25 minutes.
I used Splenda for the one I made at Christmas. I also used chopped walnuts.
